Delicious Cheese Potato Salad
Cheese potato salad is one of the easiest and most delicious ways to prepare a nutritious potato dish. Enjoy this dish for lunch, but you can still have it anytime you want.
Not only nutritious but full of great nutrients. It is my objective not only to provide quick and easy recipes, but recipes that are quick, easy, will add value to your diet and will fit right into your busy schedule and your tight budget.
CHEESE POTATO SALAD (with herbs and spices)
Makes 4-6 Servings
1 ½ lbs potatoes peeled
1 cup shredded cheddar cheese 1 clove garlic, minced
1 sprig fresh thyme 2 tsp fresh chives, finely snipped
1 tbsp fresh parsley, finely chopped 1 tsp basil, finely chopped
2 tbsp salad cream 1 tsp mild mustard
1 ½ tbsp single cream 1 tbsp mayonnaise
1 tbsp suga pepper to taste
Step 1: Wash potatoes and boil until tender but still firm. Allow to drain and cool. Then cut potato in cubes and place in a large bowl.
Step 2: Add cheese, thyme, garlic, parsley, pepper, basil and chives. Mix together.
Step 3: Add salad cream, single cream, sugar, mayonnaise and mustard to another bowl and mix.
Step 4: Pour over potato and cheese mixture and stir gently to coat evenly.
This easy recipe can be eaten at anytime and can also be refrigerated for later use. To make this dish even more interesting you can spice it up and add your own taste to it.
You could add some vegetables to the salad mixture like asparagus, broccoli, cauliflower or string beans. You would steam your vegetables first before you add it to the cheese potato salad mixture. Alternatively, if you would prefer to eat this like as a dinner (or a heavy lunch), you could prepare some pumpkin or spinach rice. These are nice twist to add to this great salad dish.
