Ham Bone Soup with Gungo Peas


Ham bone soup with gungo peas is a very tasty soup. It has a nice smokey flavour from the ham bone.

Gungo peas is very popular for bringing out the best taste in soup, and with some pig tail or salt beef added, makes it extra delicious. Its my pleasure to share this tasty soup recipe with you.

Ham Bone soup

Makes 4 Servings

Ingredients

1 Ham bone
1 ½ pig tail or corn pork
1 lb gungo peas
3 cloves garlic, crushed
2 sprig thyme
1 stalk escallion
2 tbsp butter
1 green scotch bonnet pepper
1 lb yellow yam, peeled and cut into bite sizes
3 cups flour
1 packet or can of coconut milk
1 packet cock soup mix
4 whole pimento berries
1 medium irish potato, peeled and cut in halves



INSTRUCTIONS:

Step 1: Scald (pre-boiled) corn pork or pig tail to get rid of excess salt.

Step 2: Half a large saucepan with water and set over large flame. Allow to boil up.

Step 3: Add pig tail (or corn pork), ham bone and garlic to boiling water. Cook meats until tender.

Step 4: Add yellow yam and irish potato. Allow to continue cooking.

Step 5: In the meantime, knead flour with salt and water to make dumplins. When done, make small dumplins and add to pot.

Step 6: Allow to cook for about 20 minutes.

Step 7: Add coconut milk, cock soup mix, pepper, thyme, escallion, butter and pimento berries and then mix well.

Step 8: Cover and allow to simmer for 20 minutes.

Here's a great salad recipe you will enjoy after you've had your ham bone soup. This avocado salad is very unusual as avocado is often used as a vegetable. In truth and in fact it is a fruit, so this recipe is a fruit salad recipe with lemon honey sauce. Please enjoy.


AVOCADO SALAD

INGREDIENTS:

2 small firm ripe avocados
2 ripe bananas, chopped
8 fresh strawberries, sliced in halves
8 grapes, cut in halves

INSTRUCTIONS:

Step 1: Peel avocados and cut into cubes. Place in a bowl.

Step 2: Add bananas, stawberries, and grapes.

For the lemon honey sauce, in a small bowl add 3 tbsp honey and juice from 1 lemon. Mix well then pour sauce over salad. Mix gently and chill for 20 minutes.
