Jamaican Jerk Pork
The Jamaican jerk pork is known and favoured for its spicy, delicious taste. Packed with herbs and spices, along with the famous delectable jerk sauce, this pork recipe is a must try for everyone and a must have for our visitors. This is a finger licking good dish. Have jerk pork with rice and peas, festival, roast yam, bread, or just by itself, anyway you like it, will still be delicious.
My mom, my sister and I usually go out every Saturday evening to our favourite jerk pork joint, we couldn't seem to eat enough, it was always so delicious. We always left licking or fingers or with a piece of the jerk pork wraped in foil so we could have the other day.
5lb pork rib or shoulder
1 cup Jamaican Jerk sauce ½ cup Red Stripe beer
3 tsp cane vinegar ½ cup escallion finely chopped
1 large scotch bonnet pepper, diced ¼ cup onion, finely chopped
3 cloves garlic, minced 2 tbsp crushed pimento berry
¼ tsp salt 1 ½ tsp allspice
½ cup vegetable oil ½ tbsp grated ginger
2 tsp thyme minced
Step 1: Place all ingredients in blender and puree except pork and beer.
Step 2: Place pork in roast pan and pour half of the puree all over. Let marinate over-nite for best results. More delicious when seasoning soaks into meat properly.
Step 3: Prepare a coal fire or charcoal grill pan with coals, and let coals heat up until red, scatter or push them aside so as not to have the fire blazing. This will allow slow cooking.
Step 4: Place roast pan on grill pouring a little of the mixture from time to time for 1½ hour and them sprinkle beer all over meat.
Step 5: Gather coals together to get more heat, let jerk until done. Remove pork and chop as desired. Serve and enjoy.
