Creamy spinach soup with extra vegetables added

It was also tested and proven that spinach contain a phytonutrient called flavonoid which fights cancer. Below you will find the recipe to the healthy creamy spinach soup with vegetables.



CREAMY SPINACH SOUP (with vegetables)

INGREDIENTS:

4-6 Servings

1 ½ lb chopped spinach
½ head small cauliflower cut in small pieces
½ bunch small broccoli cut in small pieces
¼ cup carrot thinly cut in rounds
½ cup creamed coconut
1 ½ cups single cream (pure or thickened cream)
½ small onion chopped
4 cups vegetable stock
2 tsp thyme leaves (gives a nice flavour)
1 chicken bouillon cube
2 tbsp butter
2 tbsp grated Swiss cheese
salt and pepper to taste

INSTRUCTIONS:

Step 1: Parboil carrots, broccoli, and cauliflower. Let cool and drain.

Step 2: In the meantime vegetables are been parboiled, melt butter in a medium saucepan over medium heat and saute onions.

Step 3: Add spinach and steam for about 8 minutes. Place spinach mixture in a food processor or blender and add 2 cups of the vegetable stock. Blend until smooth.

Step 4: Place blended mixture in another saucepan, adding the vegetables and the rest of the ingredients except single cream.

Step 5:Stir well and let simmer for 15 minutes.

Step 6:Add single cream and let simmer for about 3 more minutes. Do not bring to a boil after single cream has been added.

Step 7:Pour into dish and sprinkle Swiss cheese on top, then serve.

You can have this dish with bread, crackers, sandwich or a salad or if you wish to have it alone. Please enjoy.
